Egg Fried Rice
Fried rice is a simple and quick meal to make, but the possibilities are endless. Fried rice, although it originates in the Indochina region, is a food eaten all across the world. Each dish is different and unique in look and flavor, but there is one aspect that remains for every one - the rice. The rice is the base of the dish, and while it might not have the most flavor, it is the most important part. The rice should be dry so it doesn’t clump up. In my opinion, the best rice to use is day old rice from Chinese restaurants. The rice is not as sticky as something like sushi rice, and it is usually dyer.
I have never had a set recipe for fried rice, throughout all the years I’ve been cooking it. At its simplest form, fried rice can be delicious with just soy sauce, egg and rice. These three can make a complete meal, that has a variety of texture and flavor. There are many different ways to make it though, either by adding a different protein or a sauce on top. Two of my favorites are egg fried rice with different meats, and kimchi spam fried rice.
I don’t remember ever being taught how to make fried rice, it seems like for as long as I have been cooking I have known how to make it. I think that even though there wasn’t one person that taught me how to make it, there have been a variety of sources that have influenced how I like to make fried rice today. Both the plain egg fried rice and the kimchi spam fried rice are simple, and use ingredients that are easy to find, with kimchi being the hardest ingredient to find. Kimchi is hugely popular today, which makes finding the right kimchi the hardest. I tend to use whatever kimchi is in the fridge, but I have found that kimchi that has fermented for a longer time is best. It has a richer and stronger flavor, with more acid.
Fried rice is something more than just food for me. It represents all of the aspects of my life that have influenced my cooking, from family, the internet, and places I have visited. Whether it was my mom making fried rice for me, or eating hibachi, or watching cooking videos on youtube, I would take inspiration from these things to incorporate into my own idea of fried rice. This fried rice “recipe” is not really a recipe, it is more of a bare minimum that can be added to and changed to however you see fit.
